The restaurant landscape in Mahoning County, OH
Mahoning County had 539 food service and drinking places in 2023, with 9,763 paid employees and about $176.6 million in annual payroll; 450 of them were restaurants and other eating places. Only 150 of the 539 had fewer than five employees (U.S. Census Bureau, County Business Patterns 2023). Another 396 food businesses ran with no paid employees in 2024 (U.S. Census Bureau, Nonemployer Statistics 2024).
Closer to the office, ZIP 44503 in Youngstown, OH had 22 accommodation and food service employers in 2023 (U.S. Census Bureau, ZIP Code Business Patterns 2023). Most local restaurants, in other words, carry a staffed payroll, and partners plan around that.
1. Card and bank statements
Card-processing statements show daily sales; bank statements show what is left after the processor, suppliers and payroll. Partners usually want several recent months of both. If sales vary through the year, include enough months to show the pattern rather than only the best stretch.
2. The lease
A partner will check how long the lease runs, what rent escalations it includes and whether the landlord must consent to liens on equipment you install. A loan longer than the remaining lease term is a hard sell, because the business may not be in the space to finish paying for it.
3. Equipment quotes
For a kitchen, a cooler or a point-of-sale system, bring written quotes with make, model and price. Equipment can often be financed on its own, secured by the equipment; equipment financing explains loans, leases and equipment finance agreements.
4. The owner's experience and credit
Restaurants are often reviewed through the owner. Years running a kitchen or a dining room, past restaurants owned, and personal credit carry real weight, more so for a new concept than for an established one. Expect a request for a personal guarantee.
5. Permits and inspections
For a new restaurant or a renovation, partners want to know the project can open on schedule. Show where zoning, building permits and food-service approvals stand.
6. Advances already being collected
List every merchant cash advance and short-term obligation. A merchant cash advance is not a loan, but its daily collections reduce the cash available for a new payment, and many advance contracts restrict taking on more funding. Partners will see the debits on your statements, so disclosing them up front saves time.
New restaurant or existing one?
An existing restaurant is reviewed mainly on its own statements. A new one has none, so the lease, the build-out budget, the owner's track record and the money the owner is investing carry the request. The opening budget should include working capital for payroll and food costs during the first months, not just the kitchen.
